Description
A Salvadorean classic
Ingredients
- 3 c flour
- 2 t baking powder
- 1 t salt
- 5 T shortening or lard
- 1 1⁄4 c water, very warm
- 1⁄2 lb pork, shredded
- 1⁄2 cn refried beans
- 2 c white cheese
- 1⁄2 cn salsa
- 1 c water
Instructions
Put half a jar of salsa with half a pound of pork into a crockpot on low heat. Add one cup water, to make sure there is enough moisture in the crockpot. Cook all day long until the pork falls apart. Strain the meat and add chopped olives to the mixture.
To make the dough, mix the flour, baking powder, salt and lard together in a mixer. Slowly add the warm water until you get a dough which is sticky, but well formed. Do not add too much water, only add what you need. Continue mixing for about 10 minutes to form good gluten structure.
Once you have the dough, form into balls about and inch and a half in diameter. Flatten with a rolling pin to a very thin pancake. The grease in the dough will allow you to do this. Once you have a 10 inch pancake, fill with the appropriate amount of meat mixture, cheese and beans. Close the dough like a calzone and grill on a skillet at medium heat until both sides are browned. Best served with vinegar cabbage.

PUPUSAS!!! We go out for

Yah, we learned about pupusas at a little place in San Jose near our last apartment. Sooo yummy. Though we thought it funny that about half the time we'd go and try to order pupusas, we were told "oh, the lady that makes them went home already." Or "Are you sure? It will be a bit of a wait." [10 minutes, tops]
Our true motivation for finding a good recipe came when we moved so very far from that little place. Now it is much too long of a wait for that lady to make them for us. Happily, these hit the spot and aren't too tricky. :)
