Description

My friend Amy Wiltbank gave me this delicious recipe for granola. I think I made one or two alterations (based on various other granola recipes I researched while I waited for our next grocery trip to pick up missing ingredients). So yummy. I didn't even know I liked granola!

Ingredients

  • 2 c oats (not instant)
  • 1 c slivered almonds
  • 1⁄2 c shelled sunflower seeds
  • 1⁄4 c wheat germ
  • 1⁄4 c flax seed (ground)
  • 1⁄4 c oil (canola), for clumping
  • 1⁄2 c honey
  • 2 T brown sugar (for color)
  • 1 T water
  • 1⁄4 t salt (to bring out the flavor)
  • 1 zest of orange
  • 2 t almond extract
  • 1 c dried fruit (i used craisins)

Instructions

Combine all the ingredients except the fruit. You may use your hands to press together and encourage clumps to form. Spread evenly on a cookie sheet or 9x13 pan (sides are nice, since you'll need to stir this a few times).

Bake at 300 degrees for 30-35 minutes, or until light brown. Stir every once in a while. Add dried fruit when there is about 5-10 minutes left.

Cool. Store in an airtight container for a week or in the freezer for two months.
